I did respec to try out sorcery and other build but I feel sorcery is boring in my opinion, situational strong, but not very enjoyable for me. Honestly though the biggest problem with Dex builds is as you have noticed, there aren't a huge amount of support items prior to the endgame. Thorny Cracked Tear, Millicent's Prosthesis, Rotten Winged Sword Insignia, Lord of Blood's Exultation, Shard of Alexander, all very late game items and all essential to creating a strong Dex PVE build.

The dex is very low for an endgame endgame build. First softcap is at 40 and this doesn't even hit that. The second is at 60 and final is at 80. At 125. You can hit 55 dex if you take away the excessive mind. And lower endurance to 25.
