So if you infuse your Sellsword Twinblades with a Sharp gem it can still be upgraded by regular titanite. It'll even retain it's upgrade level. The only thing that Sharp gem changes is the DEX scaling. It increases the DEX scaling so that you do even more damage by leveling DEX. In case of Sellsword Twinblades the DEX scaling changes from A to S.
