S30v and s45vn are both really well balanced stainless EDC steels. They wear well, sharpen relatively easily, and are not super brittle. I will have other knives I can switch too if I know I'm going to be sweaty and it's generally dry where I live. The DLC should help too. I went with the cruwear.
